In the kitchen, Chef Thomas Parnaud has been orchestrating since June 2018 a cuisine that respects the history of the place: the Grand Monarque being the only restaurant in France that has both entered and remained in the Michelin since 1900.

A disciple of Escoffier, Thomas Parnaud is an ambassador of taste and the authenticity of the terroir and invites everyone to discover or rediscover recipes fallen into disuse.
An immersion in the heart of a rich gastronomic heritage that is the pride of Chartres residents and resonates like Proust's Madeleine. On his gourmet score, Thomas Parnaud gives his own interpretation of these emblematic dishes, the common thread running through Georges.

Being a guest of the Michelin-starred restaurant Le Georges is like taking a journey to the heart of timeless gastronomic traditions handed down from generation to generation: Chartres-style Egg, Curnonsky veal shop, Chartres-style brill fish, royal-style rabbit, and the very famous Grand Marnier soufflé which has been on the menu for over 100 years, embody true savoir-faire, a symbol of French elegance and refinement.
Beyond the recipes, each product has a story to tell. The story of passionate men and women with whom Chef regularly collaborates, enhancing a culinary heritage close to his heart. Since his arrival in 2018, Chef Thomas Parnaud has been committed to using 90% local produce, using a product at his most to limit waste while respecting seasonality.
Flour, oils, mustard, vegetables, fish, hazelnuts, saffron are all quality seasonal products that inspires the Chef's menu, with the main ambition to please our guests and offer them the sincerest experience possible.
The sincerity that shines through in the Chef's approach is embodied in an ethical collaboration through the “Grâce au Jardin” a back-to-work project. The program includes market gardening on living soil, the creation of an edible forest of 3,000 tree species, and the rediscovery of the leaves and plants that inspire the Chef in his cuisine.
What would gastronomy be if not highlighted by wines? Le Georges offers an exceptional wine list, remarkable for its French diversity, and featuring wines from the Loire Valley. Le Grand Monarque rolls out the red carpet: 30,000 bottles, 3,000 references, including 1,300 from the Loire, with allocations or vintages that are near from being impossible to find.
